Aboriginal people are the plurality in large areas of Canada

How does one differentiate between "Canadian" and "English" or others on the census? Is this just what people declare their ethnicity to be, ie. what they self-identify as?

Does this map seem problematic to anyone else? There is no Chinese or other Asian group listed which seems very bizarre. Also, no eastern European groups? Very bizarre. I would imagine the picture in 2013 vs 2006 is pretty different.
